If you know me, you know I love a smoothie.. in a glass, in a jar, straight from the jug….or in a bowl.
I also like pretty food and coming up with ways to make my kids understand that pretty food in a bowl is waaaay better than bright coloured crap in a box.
Sometimes i win and sometimes I lose..
Today I am winning
….with this Strawberry Crumble Bowl
Here’s what you’re gonna need:
1 cup of coconut milk (or water if you want to keep it low-fat)
1 cup of frozen strawberries
1 – 2 cups of frozen banana chunks
1/4 cup of plain rolled oats (optional but good fibre for little bellies)
1 teaspoon of vanilla paste
*A few fresh strawberries for decoration (we only had frozen)
*1 tablespoon of pure maple syrup (for an optional drizzle – note we didn’t use any today)
Make the crumble first (if you don’t have any stored.
We already have a large jar of this in the fridge that we add to meals or just roll into little bite-sized balls for snacks.
2 cups of plain rolled oats
2 cups of shredded coconut
2 cups of pitted medjool dates
If you want to make less just half everything but it’s good to make a big batch – trust me….
Process or pulse in a large food processor until it becomes sticky.
Store in a glass container with a lid in the fridge.
Make your smoothie bowl by…
Blending all of the smoothie ingredients in a high-speed blender until smooth and creamy..
Pour into two serving bowls and add some crumble and any drizzle or fresh strawberries..
There you go.. some ‘pretty in pink’ in your life.
