Vegan Rhubarb, Apple & Strawberry Crumble – Organic & Refined Sugar Free
There is nothing better than oven-baked fruit crumble on a cool autumn night right? My favourite thing to do is re-create dishes and desserts with vegan ingredients. I have grown up with a dairy and egg intolerance all my life so I have missed out on a lot of cake and pudding eating, especially considering my extended family and friends don’t make vegan treats. However, I have now learned to experiment through trial and error. By connecting with other vegans online, I’ve realised there is so much more to dessert as a vegan, and I am absolutely loving it. Hope you enjoy my crumble – it’s definitely one of my favourites.
Here’s my simple recipe for you:
For fruit filling:
1 bunch organic rhubarb stalks trimmed & cut into cubes
4 organic apples peeled & diced
½ cup organic coconut sugar
1 punnet organic strawberries
½ cup organic brown rice flour
1/3 cup organic shredded coconut
1/3 cup organic coconut sugar
3 tablespoons organic almond spread
¼ cup gluten-free organic oats
Cook all fruit ingredients together with coconut sugar until it softens, about 15 minutes and allow to cool, then place in small individual oven dishes. This made a total of 4 dishes.
Mix all dry ingredients for crumble & then add almond spread mix until it becomes crumbly and cover the top of the fruit. Add a slice of strawberry for garnish and bake on 180 degrees celsius for 30 minutes. Serve with your favourite dairy free ice-cream – as I have here with a vegan vanilla ice-cream. Enjoy!
